Mexican Street Corn
Mexican street corn, or elote, is an irresistible side dish with smoky grilled corn coated in a creamy mayonnaise and sour cream sauce. Cotija cheese, Real Salt Chili Lime Seasoning, and cilantro add salty, tangy flavor to every bite.
Ingredients:

8 ears corn, with husks

1/4 cup mayonnaise

1/4 cup sour cream

1/2 cup crumbled Cotija cheese

2 limes, cut into wedges

Real Salt Chili Lime Seasoning, to taste

1/2 bunch cilantro, chopped

Instructions:

Carefully peel back the corn husks without removing them completely. Remove the silk, then fold the husks back into place. Soak the corn in water for 15 to 30 minutes to help prevent the husks from burning on the grill. If preferred, remove the husks completely and skip the soaking step.

Preheat the grill to medium-high heat. Grill the corn, turning occasionally, until lightly charred on all sides and tender, about 12 to 15 minutes.

In a small bowl, stir together the mayonnaise and sour cream until smooth.

Spread the mayonnaise mixture evenly over each ear of hot grilled corn.

Sprinkle with chili lime seasoning, Cotija cheese, and chopped cilantro. Serve with lime wedges and squeeze fresh lime juice over the corn just before eating.
